Jollof Rice is a West African spicy, one-pot rice dish containing fried and stewed tomatoes, onion and chili peppers as its flavor base. Many West African countries claim ownership of Jollof rice but the dish may have originated in Senegal dating back to the Jolof (Wolof) Empire.
The word jollof in the language of the Wolof people literally means “one pot”.
Regardless of origin, West African countries each have their own way of cooking Jollof rice. This West African stew will always contain rice, tomatoes and chili peppers, but additional ingredients vary by geographical region.
Countries with access to seafood will often add shrimp or fish, those with access to beef, chicken or mutton will add meat. For those who prefer a vegetarian option, Jollof rice can be served alone or with a salad.
Jollof rice is a celebration dish and comfort food. You will find it served at parties, weddings and funerals in West Africa, the Caribbean, the Gulf Coast of America, any place in the World where native West Africans have passed down traditional recipes. The ingredients are relatively easy to find no matter where you live.
How To Prepare Jollof Rice
The essential ingredients include rice, tomatoes, onions and chili peppers. Finely chop your onions and peppers. In a large saucepan or pot add olive oil, tomato sauce, chopped onions and peppers and about 1/2 cup of water. Add your rice and any additional spices, add water if necessary and cook for 20 minutes. Stir and mix, then cook for another 20 minutes adding more water.
Cook until the rice has absorbed the tomato and spices and has turned orange-red in color. Serve with meat, seafood or salad.
